Apricot Energy Balls

These quick, healthy and delicious energy balls are so good that I can honestly say my family is addicted. They are filled with nutrients and deliciousness and I can happily confirm that these apricot balls are not blant at all like most of them, infact they are the total opposite, they taste fruity and sweet and the best thing is they are great for a late night craving and you won't feel guilty afterwards.
ingredients
- Toasted muesli
- Dried apricots
- Butter
- Honey
- Dessicated coconut
Method
- Place the toasted muesli into a blender and pulse until their are no more large pieces, then poor into a bowl.
- Next, place the apricots into the blender and blend until they are small enough for your liking. If you like chewy bits of apricots in the energy balls then don't blend them to much, if you don't then blend them until they are little bits and pieces and pour into the bowl containg the muesli. (you might have to blend a little at a time depending on how strong your blender is).
- Pour your honey into the same bowl as well as melting the butter in a microwave safe bowl and pouring it in.
- Wash your hands. Mix all of the ingredients with your hands and roll up tablespoon size balls or desired size.
- Roll the balls in the dessicated coconutand place them on a plate (do not stack the energy balls on top of eachother). You might want a second pair of hands to help you with rolling them in the coconut so it doesn't get messy. After they are all rolled out place them in the fridge for 15 minutes, take them out, place them in a air tight container and store them in the fridge until eaten. I'm not sure how long they can stay in the fridge for because they always get eaten straight away :)
